		<description>I have found that with some unique aged wines, blending is a great way of complimenting their mysterious flavors. Some red wine gets very bitter with age and needs a little young wine to smooth it out. Also the decanting process is much more delicate with older wines and should always rest in the decanter for at least 24 hours.</description>

Today, there are a growing number small producers making organic and biodynamic wines that are of excellent quality wine and affordable.  They also now realize that overcropped unripe tannic generic Bordeaux just won&#039;t find any buyers -even in Asia.</description>

		<description>Loud and clear.  We went to an AMAZING wine tasting dinner last night at an incredible Brooklyn restaurant.  The food was outstanding and the wine was from this lovely vineyard in Napa.  Meanwhile, as we sat at our butcher-paper-covered table with all these other foodies, we listened to the vintner drone on about the brightness of the soil and the chefs describe the origins of the farro on my plate.  it all felt very overwrought and self-conscious...delicious, to be sure...but a little much.</description>
